Good Energy Spice - Chai Tea
Brewed with intention and shared in stillness, this chai was the heartbeat of our mornings at The Good Energy Retreat. Each spice carries warmth, grounding, and a quiet joy — cardamom for clarity, cinnamon for comfort, ginger for awakening. As the aroma rises, may it remind you to pause, breathe deeply, and sip in the good energy that’s always within reach.
Recipe makes about 7 1/2 cups
Spice Bag:
2 or more black peppercorns
10-12 cardamon pods
1 cinnamon stick
4-5 cloves
2 tsp fennel seed
2-3 star anise
Other Ingredients:
1 inch fresh ginger root - peeled and cut into thin slices
1 1/2 cup milk (almond)
6 cup water
2 black tea bags (orange pekoe or darjeeling)
4-6 tsp sugar - or to desired sweetness
Preparation:
Place spices (.. your little bundle of good energy), in a small muslin spice bag. Smash with a mallet or heavy cup to open the spices and release the aroma
Place the bag in a large pot with 6 cups of water the ginger slices. Bring to a boil and then let simmer for 3-40 minutes. Let is brew longer if you like it a little more spicy.
Add in the milk. Once it’s heated through, turn-off heat, add sugar, tea bags and steep 7-10 minutes.
Remove tea bags, spice bag and ginger before serving.
If by some miracle there’s any chai left, store it in the fridge for up to two days — though chances are, there won’t be a drop to spare.
